5-minute Espresso Fudge Breakfast Mug Cake
Why can’t I have cake for breakfast?
And why can’t I have it now, hot and gooey?
A hot fudge espresso cake that takes only 2 minutes to prepare, 3 minutes to cook, and for breakfast whose in? Um me !!!
Usually, warm baked goods are perhaps a weekend treat or something I have snuggled into my favourite cafe on a stormy day. With moody jazz playing and cups of wildly strong coffee.
Also completely overlooking the fact that cake is a treat! I’m not sure I’m exactly wanting cake for breakfast either because I imagine I would be hungry 5 minutes later with a dull headache.
This 5-minute fudge cup is not so! With oats, almonds, bananas, espresso, a touch of oil, maple syrup, and a few squares of dark chocolate it’s more really a hearty healthy banana muffin.
To truly make this cake a 3-minute cook I used my trusty microwave, you may want to cook it a little more or less depending on if you prefer it gooier or denser. If you like what you taste you can also mix the dry ingredients into a jar making this mix up even quicker.
5-minute Espresso Mug Cake
1/2 cup (60 g) Ground almonds
1/4 cup (30g) Oats
1/4 tsp baking soda
1 tsp olive oil
1 tsp maple syrup
1 banana
1/4 tsp vanilla extract
2 Tbsp espresso or coffee
3 squares of good quality dark chocolate
1)Mash banana in a bowl and add to that all your wet ingredients
2)In a bowl mix almonds, oats, and baking soda
3)Dump one bowl into the other and mix until well combined
4)Pour into a mug pushing squares of chocolate inside
5)Cook on high for 2-3 minutes in your microwave
Eat with a spoon while warm!
