Pasta the ultimate in comfort food. A bowl of hearty noodles with a rich sauce it is a dish capable of giving us a big hug. However, wheat today has become the fierce enemy of many. There are so many books on the topic and we all know with something that is mass produced they kill all that is natural and wholesome to make a buck. With the wheat kernel drenched in pesticide and then stripped of all its goodness our body sometimes doesn’t know what to do with it. Even if we can digest it without too much bother it isn’t the most nutritious meal we could choose.
So we still, want our hug o’ bowl and how can we get it? Seems we all agree there are many other grain noodles that are wholesome and taste great. I personally like brown rice pasta. The consistency is pretty close to the wheat pasta we know and love. But, it is also giving my stomach a hug after we eat it. But, you can choose any others you like.
On to the fun part the rich creamy avocado, courgette (zucchini), almond pesto. It’s so simple in fact I came home pretty grumpy, tired, and hungry that these were the items I had on hand that all went into my food processor. After I tasted it, I wrote out this recipe because I wanted to share it with all of you. Hope you love it!
Avocado, Courgette, Almond Pesto
1 ripe avocado
1 large courgette (zucchini)
handful of basil leaves if you have it
2-3 cloves of garlic
1/4 cup almonds
1 lemon juiced
2 tsp dijon
2 Tbsp olive oil
SALT TO TASTE (don’t omit this or it will taste flat)
Blend everything in food processor and check flavour add more garlic, lemon, or salt it it needs it.
Cook enough pasta for 4 people drain and this pesto will more than cover it.
Put on a big platter and eat!
