I have an Aunty who loves all things pampering and decadent. One thing she doesn’t love about her daily routine is the heavy burden of waking up in the morning. To ease this painful transition she has a delightful ritual a daily reward to celebrate herself. She enjoys her morning coffee in bed accompanied by her artisan chocolate truffle tray in an array of flavours. She slowly savours only 1 or 2 making each bite count between sips of her steaming brew.
Not exactly the best way for your body to start the day BUT what I admire is a mindful joyous moment dedicated to yourself. A moment for just you and flavours! So in honour of my family heritage here is a sinful but clean and healthy way to either start or finish your day. In fact whatever part of your daily routine you find lacks a bit of lustre just add a chocolate truffle.
These simple and easy vegan gluten free choc truffles are made from coconut oil. I would recommend using the best quality of coconut oil you can find for this recipe because you will taste it. I have gone for a lemon and sea salt flavour with some chia seeds thrown in for good measure but you can do whatever you fancy. Give this recipe a go and tell me what you think.
