Easy No Bake Sweet Potato Coconut Mousse Cake

Confession this cake isn’t fully raw as you have to cook and mash your sweet potato but other than that this light mousse cake is pretty much uncooked.

Not to mention you are getting this sweet root vegetable into your cake!!!
From the morning glory family, the best family to be from is full of vitamin A, C, manganese, copper, pantothenic acid and vitamin B6. Also loaded with potassium and fibre.

Sweet Potato Coconut Mousse Cake
Instructions
Cake Base Method
  1. Grind oats into a flour in your food processor
  2. Add dried apricots, coconut oil, salt and blend till broken down and fully combined
  3. Then add your coffee or water to fully bring together into a dough
  4. Press into a round 9inch spring form pan and chill for 20-30 mins
Mousse Cake Method
  1. Place coconut cream and maple syrup into your food processor and blend till smooth
  2. Then add all other ingredients and blend till smooth and combined
  3. Pour Cake mixture onto the chilled base and chill for another 20-30 minutes until the cake is cold and set.
  4. Decorate with cinnamon or fresh fruit
