Easy Summer Evening Dessert Grilled Apricots with Coconut Whipped Cream and Lavender
The short season of Apricots is upon us or maybe almost finishing depending on your climate. The best way in my opinion is to get the heat on these babies. Of course raw they have a pleasant flavour and texture. However, when you apply a bit of fire the flavour gets turned up to a peachy caramel first date.
I only grilled one side so there is still a bit of firmness and can be picked up with your fingers. You can also heat both sides as well if you want them softer. A bit of coconut whipped cream and a dusting of lavender makes this a first date in Provence and made me close my eyes when I popped one in my mouth. Let me know if you liked them as much as I did. I think these would be great for a light summer dinner party alongside a few crunchy biscuits and a hit of bitter coffee.
Grilled Apricots with coconut whipped cream and Lavender
Dried lavender few teaspoons
Heat a grill pan to high heat. Mix your oil and honey together and brush on the raw halved apricots. Place inside down on the hot pan. It will grill and sizzle remove when there is a grill mark. Allow to cool before piping or spooning your coconut cream and a sprinkling of lavender. Enjoy!
