Get Sandwiching With These Peanut Butter and Flaxseed Jam Cookies
Dessert is always a good excuse to remind yourself about the enjoyment of being a child. Peanut butter and jam the perfect childhood flavour combinations. I admit I don’t eat this exciting combo much anymore maybe sometimes on toast but rarely in a sandwich. In a cookie sandwich, definitely!
As we are always trying to find healthier ingredients to keep us fuelled, making your own jam with flaxseeds, linseeds, or chia seeds only takes a few minutes and is so much better for you than regular jam.
Not only because you can control the sugar but you’re getting the added boost of these power seeds.
High in Omega 3 fatty acids, heart-healthy, high in fibre, and helps fight cancer.
With the peanut butter, you can buy some great all natural brands with no sugar or added oil. Or roast and grind your own peanut butter. These are so easy to make and I would dare to say even fun! So get sandwiching!

- 1/2 cup frozen berries 125ml
- 2 tbsp water
- 1 tbsp Lemon juice
- 1 tbsp maple syrup
- 2 tbsp ground flax/linseeds
- 2-3 tbsp natural peanut butter
Ingredients

- Grind oats and coconut into a flour in your food processor and place in a bowl
- Add the ground oats and ground coconut, the baking powder and stir
- In a separate bowl add the wet ingredients the banana mashed, melted coconut oil, and maple syrup and stir
- Then combine the two bowls the wet and the dry ingredients into a dough.
- Roll into 12-14 balls, then use a flat drinking glass with some non-stick paper to flatten each ball (see photo). Flatten the balls onto a baking sheet lined with baking paper (Parchment paper)
- Place in a preheated oven 180c(350f) for 10-12 minutes or until golden brown. Allow to cool before spreading jam and peanut butter.
If you would like to add these to a bowl of nice cream, just blend 2-3 frozen bananas with a spoon of lemon juice or water to make it come together. Then swirl peanut butter and the left over jam. Enjoy!
