Put Flapjack Back On Your Table! Healthy Vanilla Walnut Flapjack

I use to love traditional flapjack and I was recently looking at the ingredients and it’s loaded with sugar!
I think it makes a great breakfast or snack at coffee break so why not make a healthy one.

This version isn’t as chewy as the normal perhaps a bit softer but it’s delicious. Feel free to swap the walnuts for any other nuts, they add a nice crunch and even better if they are roasted.

Instructions
  1. Prepare the wet ingredients in one bowl put the melted coconut oil, maple syrup and mashed banana.
  2. Then to that bowl add the whole oats, chopped walnuts and a pinch of salt.
  3. Mix well and place in a 9inch square cake pan, I used grease proof paper (parchment paper)
  4. Line the pan and then add flapjack mix and baked for 20-30 minutes or until golden brown, at 180c (350f)
