This super easy date caramel toffee sauce that is refined sugar free, dairy free, and so delicious.

Calling out to all NON-coffee fans!

I have heard it said “I wish coffee tasted as it smells”

Now let’s be clear these words are uttered by the mellow world of tea drinkers. Don’t get me wrong, I absolutely love smoothly brewed tea leaves with a touch of milk.

But coffee that’s another thing! 

Because it takes you to a completely different place where people who sip freshly ground espresso shots close their eyes and say thanks.

Or at least I do. This slightly bitter elixir makes my world just a little bit brighter.

If my outlook has suddenly gone bleak the light the lights up my tunnel is coffee. Maybe sad I know, as there is so much more to life than coffee.

But on a daily basis, this drink can act as a fresh pair or rose coloured glasses.

Therefore, this caramel that is kissed with the flavour of the bean actually tastes of ground coffee.

The sweetness from the dates hugs the coffee flavour and comes alive with a pinch of sea salt.

Not to mention the sweetness comes only from the dates and 1/2 a banana. It’s vegan, gluten-free, paleo, and made up of healthy whole ingredients.

I have so many plans for this caramel but right now it’s for breakfast. 

Over this chia seed chocolate pudding.

With a quinoa seed crunchy granola.

Coffee Caramel

Ingredients

  • 1 cup (180g) dried dates (soaked in boiling water 5 mins)
  • 2 tbsp espresso or strong brewed coffee
  • 2 tsp instant coffee granules
  • 1/2 banana 50g
  • 1/4 tsp salt
  • 1 tbsp coconut oil

Method

  1. After you soak your dates drain and place in food processor
  2. Add all other ingredients and blend until smooth and velvety.

Ingredients

  • 1/2 cup chia seeds
  • 325 ml soya milk or any plant based milk
  • 2 tbsp cocoa powder
  • Add maple syrup if you want more sweetness

Method

  1. Whisk chia seeds with any milk and cocoa powder until well combined
  2. Chill until set and pudding like
  3. Place a serving of chia pudding with a spoon of coffee caramel, coconut milk and toasted nuts or my quinoa granola

Ingredients

  • 1 cup 200g quinoa white raw
  • 1/2 cup 100g chia seeds
  • 1/2 cup 100g cashews
  • 2 tbsp olive oil
  • 1 tbsp maple syrup

Method

  1. Mix well and bake for 20-30 mins at 180c (350f)
  2. Stir while baking so granola can brown evenly
