Make Your Own Personal Tomato Plunge Pool Ice Cold Gazpacho

‘Do you want some gazpacho? It’s a cold soup!’
‘No thanks, I don’t think I would like that’

Maybe you’re thinking it’s like your bowl of piping hot soup has gone cold and mushy. Or your thinking the only thing enjoyable and comforting about soup is its soul-soothing warm you to your toes giant hug from your wood burning stove kind of meal. But you have not met soups other personality.

Think ice cold spicy cocktail with a citrus zing and garlicky creaminess.
It’s mid-week 6:15pm the roasting sun has no signs of disappearing and we have no idea what to make for dinner. The thought of a plate of ice cubes has crossed your mind with a side of lime water. If the heat from the refrigerator light is making you hot forget about turning on your oven.

In this case, pull out your blender and throw in tomatoes, cucumbers, celery, garlic, lime, cilantro, a hit of chilli, ice and puree. Voila, you own personal tomato plunge pool. Now just a drizzle of olive oil. It couldn’t be easier!

I have posted a recipe with amounts but treat these amounts very lightly.
The core is the flavour and the tomatoes. Feel free to add peppers, avocados, spinach, lemon juice, and fresh chillies for an extra kick!

Gazpacho

(serves 4-6)
5 tomatoes
1/2 cucumber
2 celery sticks
few celery leaves
1 tbsp red wine vinegar
2 cloves of garlic
1 tbsp cumin
1 lime juiced
handful fresh cilantro/coriander
sea salt/pepper
dash of chilli powder
water if too thick
drizzle of olive oil
few ice cubes
Place all ingredients in your blend and hit puree.
If after you blend you are tasting bland city just add another clove of garlic, touch more salt, a squeeze more lime, and or a dollop of honey. Pour over more ice if you like.
I think this would also be a bit cheeky with vodka cold soup meets alcohol!
