Eating for comfort or eating for health?
Milk and cookies just happen to really hit the comfort jackpot with me!
Well to be honest a bit of coffee with that milk would defiantly kick things up!
If you have been following my recipes I am sure you have noticed that basically, it’s food that makes me happy. Maybe that’s an obvious statement but I’m not a principled eater.
I admire these disciplined people who eat and workout regardless of how they feel about it at the time.
Sadly I eat what makes my heart rejoice and go jogging when I am yearning to go.
Does that then mean I eat rubbish? Well in the past that was definitely true but now I just sub in healthy ingredients and I am laughing. I use to think the comfort and health were on opposing sides but not anymore.
Just eat gorgeous healthy food that is packed with the best ingredients you can find!
Oatie Shortbread Cookies
Makes 10-12 cookies
100g coconut oil
3 Tbsp honey or rice malt syrup
splash of vanilla extract
1)Grind your oats into a flour in your food processor and set aside.
2)Next add your coconut oil and honey together with an electric beater or food processor.
It will have a soft pillowy look about it.
3)Add your ground oats and mix till it starts to make a dough.
4)Roll into balls and place on a cool baking sheet and push down slightly with a fork.
5)Preheat oven to 180c/350f* Bake for 15 minutes or until golden brown. Allow to cool on a wire rack before eating.
100g good quality dark or raw chocolate
1/2 cup (125ml) coconut cream (chilled tin of full-fat coconut milk cream only)
1)Melt chocolate. Allow to cool so not boiling hot
2)Whisk in coconut cream till fully mixed.
