Do You Like Your Oats Dressed Or Undressed? Pecan Sweet Potato Nut Butter
Are your oats dressed or undressed?
Got to thinking about this topic this week as I was preparing a fancy porridge recipe.
Porridge is such a comforting warm healthy breakfast that surprisingly keeps you powering through till lunch.
But the question still remains dressed or undressed?
There has been many a morning when my oats seem to have a runny sloppy consistency and my cupboard that is supposed to be heavy with exciting toppings is incredibly bare!!!
I crave lashings of crunchy nuts, gleaming fruit, pools of nut butter, and drizzles of maple.
So to avoid such depressing mornings I try to be prepared and have such items made and ready.
One such item that really takes your oats into healthy overdrive is pecan sweet potato nut butter.
I am overjoyed that I managed to have this nut butter include a vegetable! The sweet potato makes this nut butter even more hearty and creamy. With a little sweet kick from a bit of maple syrup and cinnamon.
Super easy to make hope you like it!!!
Pecan Sweet Potato Nut Butter
300g Roasted Pecans
200g (3/4cup) cooked and mashed sweet potatoes
2 Tbsp maple syrup
2 tsp cinnamon
pinch of sea salt
2-4 Tbsp water
Roast pecans till golden and allow to cool
Place your pecans into a food processor and blend till the roasted pecans become a butter.
To the pecan butter add the sweet potato, maple syrup, and cinnamon
Once everything is combined add the water 1 Tbsp at a time till the butter is a consistency you like
