Healthy Pistachio Snickers Bar – Raw, Vegan and Gluten Free
Calling all lovers of all things chocolate! You are going to love these!
When I was little we always got to choose our own chocolate bars from the shop as a treat. Snickers were always my favourite! The dense nutty caramel centre! After you eat one of them you rarely want more as they are intensely sweet.
I have to say I don’t really eat them anymore but they hold a treasured place in my heart. And these as a remake they aren’t a perfect replica but more of a respectful nod to the
beautiful layers.
I went for oat nut butter base, caramel, pistachio, and chocolate topping.
Really pretty simple but it hits the super crazy yell at your husband sugar craving charts. Or should I say prevents you from having wild yelling at your husband sugar cravings. I should call them ‘keeping you steady pistachio snickers’.
Healthy Pistachio Snickers Bar – Raw, Vegan and Gluten Free

Ingredients
Base
- 100 g oats 1cup
- 3 tbsp almond butter
- 2 tbsp maple syrup, or brown rice syrup, or sweetener of your choice
- 1 tbsp Lemon juice
Caramel
- 150 g dates 3/4cup
- 1/2 banana 50g
- 1/2 tsp sea salt
- 1 Tbsp coconut oil
- 1 tsp Lemon juice
Pistachios and Chocolate
- 100 g Pistachios roasted/salted 3/4cup
- 200 g dark chocolate
Method

Blend oats into a flour a minute or two

Add almond butter, honey, and lemon juice

Press evenly into (baking paper lined) 9inch loaf tin and freeze for 10 minutes

Soaked dates in boiling water for a few minutes to soften then drain

In your food processor blend dates until completely broken down

Add all other ingredients until fully mixed and combined

Spread onto the base and chill again

Chop pistachios roughly
-
Spread nuts evenly (and push down lightly) into loaf tin on top of the chilled caramel

Lift out base by pulling up on the baking paper and slice into bars widthwise

Pour melted chocolate over each sliced bar and chill until set, enjoy!

Do these remain in the freezer or the refrigerator. Also how long will they keep fresh?
Hey sorry I have just seen your question. These would last for ages in the freezer you may want to thaw them before eating though. You can also keep them in the fridge and would probably last a week if you don’t eat them straight away.
