Caraway Seed Crackers and Cashew Nut Cheese

Ingredients

Caraway Seed Crackers

  • 150g cornmeal (1 cup)
  • 190g teff flour (1 cup)
  • 200g oats (2 cups)
  • 1 tsp caraway seeds
  • 1/2 tsp baking soda
  • Good pinch of salt (1tsp)
  • 1tbsp lemon juice
  • 185 ml water (3/4cup)
  • 5 tbsp olive oil

Cashew Nut Cheese

  • 200g cashews (1 cup +2 Tbsp)
  • 1 garlic clove
  • 2 tsp white miso paste
  • 1 tbsp almond butter (optional)
  • 3 tbsp nutritional yeast
  • 1 tbsp apple vinegar/or lemon juice
  • 3 Tbsp olive oil
  • 3 tbsp water
  • 1 tsp sea salt

Method

Caraway Seed Crackers

  1. Grind oats into a flour in your food processor
  2. Mix all dry ingredients together in a big bowl and mix
  3. Pour all wet ingredients in a separate bowl
  4. Make a well in the centre of the bowl with the dry ingredients and pour in wet and stir with a spoon until it comes together into a dough
  5. If too wet add a spoon or 2 of more cornmeal or teff flour
  6. Kneed dough a few times on a heavily floured surface and use a rolling pin to roll out. Keep plenty of flour under the dough or it will stick and you won’t be able to roll. Roll until pretty thin (approx. 3mm) see picture and use a knife to cut into shapes of crackers you prefer.
  7. Heat over to 180c/350f and place crackers on a large sheet with baking paper. Bake for 20-25 minutes or until golden. DO NOT OVER BAKE CRACKERS WILL BE TOO HARD! Allow to cool and store in an airtight container.

Cashew Nut Cheese

  1. Soak cashew nuts overnight or for at least 6 hours
  2. Place the Soaked cashew nuts, garlic, miso, into your food processor and blend until smooth.
  3. Add the nutritional yeast, lemon or vinegar, oil, salt and water and blend again until smooth.
