Quick Sweet Apple Caramel A Refreshing Warm Hug?

Indulging in fruit? Hmmm, two words that don’t really seem to go together. Earthy refreshing fruit or intensely sweet indulging treats?

So I am looking to put the two together. Something that hits the sweet spot but is still light and refreshing. Something we may need if we feel a little sluggish from our rich Winter foods.

The warming hug of cooked apples and cinnamon blended into a date caramel. Great for pancakes, toast, porridge, or a bowl full to coat our sliced fruit. Super easy and super delicious!


Apple Cinnamon Caramel

3 green apples peeled (1 cup/300g)
250g (3/4 cup) Medjool dates
1/2 lemon juiced
1 Tbsp cinnamon
1/4 cup (60ml) maple syrup
Pinch of sea salt
1)Put apples with lemon juice, cinnamon, sea salt and cook in a pot on medium heat till soft with the lid on.
2)Allow to cool then add apple mixture, maple syrup, dates in your food processor and blend into a soft caramel
3)If too thick add a spoon of water
4)I strained my caramel through a sieve to give the caramel a smoother finish but that’s optional.
store in an airtight container in the fridge.
