Who Has Time To Bake Pie? No Need With This White Chocolate Mousse Layered Healthy Pumpkin Pie

One of the most disappointing things about homemade pie is those 1-2 hours it takes to cook. The only reason I believe the oven light was invented was so you could turn it on, push your face up to the warm glass and stare at pie. Even if you do that there isn’t much visible change happening while a pie crisps up.

Although pie has its place in life I wanted to make a recipe that tastes of pie but requires no long hours of staring or waiting. And it’s healthy enough that you can have it for breakfast.
It is three separate layers but the steps are pretty easy.


White Chocolate Mousse layered Pumpkin Pie

4 servings

White Chocolate Mousse
1 chilled can of full-fat coconut milk
2 Tbsp melted cacao butter (optional)
20ml (1 Tbsp+ 1 tsp) maple syrup
vanilla extract or vanilla powder
Pumpkin pie layer
250g (1cup) pumpkin cooked pureed
100g (1/2cup) medjool dates
2 Tbsp tahini
1 Tbsp maple syrup
1 tsp pumpkin spice
splash of vanilla extract
a squeeze of lemon
pinch of sea salt
Ginger crumble layer
75g (1/2 cup) raw almonds chopped
small knob of coconut oil
50g (1/2 cup) rolled oats
1/4 tsp ground ginger
2 Tbsp maple syrup
Make white chocolate mousse
1)Scoop out coconut cream from chilled can of milk leaving the liquid behind.
2)Beat the cream till fluffy then add maple syrup and coconut oil.
3)Melt cacao butter. Fold butter one spoon at a time into coconut cream mixture.
4)Chill till other items are ready
Make Pumpkin Pie 
1)Pit dates, if using regular dates soak in boiling water to soften.
2)Blend all ingredients in your food processor till smooth and creamy.
Make Crumble Layer
1)Melt coconut oil in a frying pan. Add chopped almonds and oats toss and toast stirring regularly to brown evenly.
2)Add ground ginger. Add maple syrup and let the heat bubble syrup so it coats mixture evenly. Set aside and allow to cool.
Once all items are ready, layer in glasses any way you like.
Feel free to eat immediately or keep in the fridge to eat later.
