What’s In Your Lunch Bag? Try This Artichoke Hummus

Not sure if you are like me but I am rarely at home for lunch. I think if I was hot meals in hot bowls these winter months would be my choice.

I always have a lunch bag with me even if it doesn’t have a traditional Lunch fare in it.
If I don’t have time I try to throw a variety of healthy snacks in it like raw chopped veg, olives, pickled cucumber, oat cakes, rye crackers, a smoothie, bottle of water, fruit, chocolate.
If I do have more time a dip like hummus or baba ganoush, hot soup in a thermos, or a salad.

So that leads me to this recipe as I am always looking to jazz up my hummus here I have gone for a jar of artichokes they are pack in oil which I drain off. Not that oil is bad but not over doing this wonderful product is always encouraged.
I love artichokes but aren’t very strong in flavour they have more of a creaminess thing going for them that is always welcome and helpful for a vegetable. If you can’t find them in a jar in a tin or canned may be more common where you are. Get hummus-ing!

Artichoke Hummus
  1. Place everything in you food processor and blend until smooth.
  2. Check seasoning and add salt or lemon if it needs a bit or of a flavour kick !!!!
